This is an oldie of one of my kids.  I love his smile, I’m sure he is saying “Cheese”.

He had open heart surgery when he was 6 weeks old for partial anomalous pulmonary venous return (PAPVR), and also received his first pacemaker at 2 day old.  He’s been a real trooper, in everything that he has endured!  He gave a speech to his classmate last year, on the pacemaker, and came in 2nd in his class.  It was a great way for him to educated his classmates, as well as himself!

I discovered this recipe last year, one of my past clients, who I have done several
“Precious Sadie’s” parties for, instead of a birthday cake, she wanted to have a variety of different cookies that her mom makes.  She shared this recipe with me, and I finally made them for the first time today! They are yummy!

Chocolava  Cookies                     Preheat oven to 350

1 1/3 cups flour                                                                                  

1 cup sugar

1/3 cup packed brown sugar

½ cup cocoa

1 tsp baking powder

¼ tsp salt

¼ cup butter or margarine softened

2 large eggs or 3 large egg whites lightly beaten

2 tsp vanilla

Icing sugar for rolling

In large bowl combine flour, sugar, brown sugar, cocoa, baking powder and salt, break up any lumps of brown sugar.  Add the butter and stir with a fork or pastry cutter until the mixture is well combined and crumbly.

Add the eggs and vanilla and stir by hand just until the dough comes together.  The dough will be fairly dry.  It will seem at first that there isn’t enough moisture, but if you keep stirring or get in there with your fingers it will eventually come together.

Place a few teaspoons of icing sugar into a shallow dish.  Roll the dough into 11/2 inch balls and roll in icing sugar to coat.  Place on sprayed cookie sheet or I use parchment paper, as then it makes clean up even easier!

Bake for 12-14 minutes until just set around the edges but still soft in the middle.  Transfer to wire rack to cool it makes 20 cookies.  I would double the batch at least, these won’t last long!

I was enjoying my holidays.. a cross the road trip to the Western US, to flew to the East Coast, and then back to the Western, and a drive back home.  I didn’t take the time to download and upload photos everyday…So in lieu of what I have missed, I will update once I get the laptop back, as it’s away with my dear husband, and the I can transfer the photos in a album for each day I missed.

 

I haven’t yet updated, but I will once i’m done travelling! August 16, 2011

This is a picture of the Calgary Temple of the Church of Jesus Christ of Latter-day Saints, that is currently under construction up in the NW of Calgary, you will see it on your way out of Calgary, on Crowchild Trail.  Once it is completed, it will be open to the public so they can see what it is like inside, before it is dedicated.  What do we in these buildings?  Check out this short video: http://lds.org/church/temples/why-mormons-build-temples?lang=eng
